
Honeymoon Mussels Cataplana
Joanna and I made these mussels during our island honeymoon, picking
the mussels from Camp Cove and digging a few clams from Quandary Cove.
A cataplana is a portuguese cooking vessel, made of copper, that is
hinged somewhat like a clam. Traditionally a cataplana is served with
shellfish and pork.
Ingedients:
2 pounds, or about 30, cleaned fresh mussels
6-8 clams (optional)
1 Tablespoon olive oil
1/2 small red onion, diced fine
1 link - ¼ pound - chorizo sausage, cut in half lengthwise, and
then cut into ¼’ pieces
1 clove garlic, peeled and chopped fine
½ cup white wine (we had Sancerre)
2 Tablespoons tomato, seeded and diced (or substitute, as we did, two
tablespoons of leftover salsa)
Method:
With pan on medium heat, add olive oil, onion and chorizo. Cook for
two to three minutes, until onion is softened and chorizo has colored.
Add garlic and saute for 1 more minute.
Add the tomato (or salsa) and wine.Turn the heat to high.
Add the mussels. Cover the pan with a lid.
After three minutes, stir the mussels and clams. Replace the lid.
After two or three more minutes, give the mussels another stir and inspect
them. The mussels should be open wide. Remove the pan from the heat
and serve.
